Broccoli Salad with Bacon and Almonds
This is a great make ahead meal option. Toss in some diced avocado and serve with a hardboiled egg for a full meal.

Ingredients
- 3/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 teaspoons monk fruit powdered, or more to taste, up to 2 tablespoons
- 4 cups broccoli broken into small florets (1 pound, about 2 large heads)
- 1/4 small red onion diced small
- 8 slices cooked bacon chopped
- 1/2 cup sliced almonds toasted and chopped
- salt and pepper to taste
Instructions
- Stir together the mayonnaise, vinegar, and monk fruit until well combined in a large bowl. Taste and adjust seasoning, especially monk fruit to desired sweetness.
- Add in broccoli, onion, bacon, and almonds and stir to coat everything evenly.
- Season to taste with salt and pepper then refrigerate for one hour before serving.
Notes
This recipe is dairy free but if you like, you can add shredded cheese.
