Salmon, Avocado, and Cucumber Salad with Lemon Dressing
Bright, fresh, and fast. This is an easy, no-cook meal. Use any fresh herb you like. Tarragon or basil would also be good here.

Ingredients
- 6 oz smoked salmon flaked
- 1/2 avocado diced
- 1/2 cucumber diced
- 6 oz arugula
- Dressing:
- 1/2 tablespoon shallots finely minced
- 2 teaspoons lemon juice 1 lemon
- zest of 1 lemon
- 1 tablespoon parsley finely minced
- 4 tablespoons avocado oil
- salt and pepper to taste
Instructions
- Combine all dressing ingredients in a small bowl and stir to mix well. Pour over arugula, cucumber, avocado, and salmon in a large bowl and toss to combine.
