6 oz smoked salmon flaked 1/2 avocado diced 1/2 cucumber diced 6 oz arugula Dressing: 1/2 tablespoon shallots finely minced 2 teaspoons lemon juice 1 lemon zest of 1 lemon 1 tablespoon parsley finely minced 4 tablespoons avocado oil salt and pepper to taste
