Artichoke Hearts Gratin

These are a light and refreshing take on artichokes that make for a wonderful appetizer.

Ingredients

  • 14 ounces canned whole artichoke hearts halved (or frozen and thawed)
  • 1 teaspoon olive oil or avocado oil
  • salt and freshly ground black pepper to taste
  • 2 tablespoons pork panko BBQ or chili flavor pork rinds, crushed
  • zest of one lemon
  • 1/8 cup finely grated Parmesan or nutritional yeast, if dairy-free
  • 1 tablespoon olive oil
  • 1 tablespoon Italian parsley chopped

Instructions

  • Halve artichoke hearts and drain well on a paper towel for 15 minutes then season with salt and pepper.
  • Line a baking pan with parchment.
  • Place artichoke heart halves cut side up on the prepared baking sheet. Sprinkle with pork panko, lemon zest, and Parmesan cheese and then drizzle with olive oil.
  • Broil until well browned on top, 7-10 minutes. Sprinkle with parsley and serve with lemon.
