Thai Basil Chicken

Sweet, salty, and full of umami, this is a delicious Asian-inspired chicken meal when served with cauliflower rice.

Ingredients

  • 1 tablespoon avocado oil
  • 1/2 yellow onion sliced
  • 2 pounds boneless skinless chicken thighs cut into bite size pieces
  • 6 tablespoons garlic minced
  • 2 tablespoons  fish sauce
  • teaspoons monk fruit granulated, or to taste
  • 5 tablespoons gluten-free soy sauce or coconut aminos
  • 2 tablespoons coconut aminos
  • 1/4 teaspoon pepper
  • 1 cup basil leaves preferably Thai

Instructions

  • Heat a skillet over high heat. Add oil and when hot, add onion and cook, stirring until soft and beginning to brown, about 5 minutes. Remove from pan and set aside.
  • Add the chicken to the now empty pan and cook, stirring often until chicken is cooked through and beginning to caramelize, about 10 minutes. Add garlic and cook until fragrant, about a minute. Add soy, coconut aminos, monk fruit, and reduce until little sauce remains, about 5-10 minutes. Off heat, add black pepper and basil. Stir in to wilt basil. Serve with cauliflower rice and a few more fresh basil leaves, if desired.
