- 2 pounds boneless skinless chicken thighs cut into bite size pieces
- 6 tablespoons garlic minced
- 2 tablespoons fish sauce
- 3 teaspoons monk fruit granulated, or to taste
- 5 tablespoons gluten-free soy sauce or coconut aminos

Optional:
- 1 small head of cauliflower
- 1 tablespoon toasted sesame oil
- 1 tablespoon gluten-free soy sauce or coconut aminos
Instructions
- Heat a skillet over high heat. Add oil and when hot, add onion and cook, stirring until soft and beginning to brown, about 5 minutes. Remove from pan and set aside.
- Add the chicken to the now empty pan and cook, stirring often until chicken is cooked through and beginning to caramelize, about 10 minutes. Add garlic and cook until fragrant, about a minute. Add soy, coconut aminos, monk fruit, and reduce until little sauce remains, about 5-10 minutes. Off heat, add black pepper and basil. Stir in to wilt basil.
