Heat a skillet over high heat. Add oil and when hot, add onion and cook, stirring until soft and beginning to brown, about 5 minutes. Remove from pan and set aside.
Add the chicken to the now empty pan and cook, stirring often until chicken is cooked through and beginning to caramelize, about 10 minutes. Add garlic and cook until fragrant, about a minute. Add soy, coconut aminos, monk fruit, and reduce until little sauce remains, about 5-10 minutes. Off heat, add black pepper and basil. Stir in to wilt basil. Serve with cauliflower rice and a few more fresh basil leaves, if desired.
