Radishes with Chive Butter and Salt

This is a great keto snack. The herb butter is versatile – mix up whatever you have on hand or in your garden. Leftovers are great melted over steaks or into soups, even thrown into dishes at the end of cooking for a little richness and flavor.

Ingredients

  • 8 ounces butter softened
  • 3 tablespoons chives minced, or other fresh herbs of choice
  • salt and pepper to taste
  • 3 bunches radishes trimmed and quartered
  • flaky sea salt

Instructions

  • Mix the butter, herbs, salt, and pepper until well combined. Scoop onto radish quarters and top with flakes of salt. Save any remaining butter by rolling it into a log using waxed paper. This can then be stored in the refrigerator for several days or frozen for several weeks. Simply unwrap and slice to use again.
