Peruvian Tiradito
A peruvian ceviche that is rich thanks to the yellowtail and refreshing due to the bright sauce of peppers, garlic, ginger, lime, and cilantro. This makes an excellent light meal.

Ingredients
- 1/8 cup aji amarillo paste
- 1/6 cup fresh lime juice
- 1 medium clove garlic minced
- 1/4 teaspoon ginger grated
- salt
- 1 teaspoon minced fresh cilantro
- 3 ounces sashimi-grade yellowtail or salmon
Instructions
- Combine all ingredients except for fish in a bowl and stir to combine. Adjust seasonings to taste.
- Slice fish into thin pieces, arrange on a plate, and spoon sauce over top. Serve.
