Spice Rubbed Pork Chops with “Apple” Relish
This is a great flavorful pork chop. I like to top it with a sweet spiced keto “apple” relish though you can add different toppings and sauces for a different flavor profile. It also happens to be fast and easy to prepare, perfect for a weeknight meal. Cook it to an internal temperature of 145ºF and be sure to rest it to ensure that it stays juicy.

Ingredients
Rub:
- 1 tablespoon monk fruit granulated
- 1 teaspoon coriander
- 1 teaspoon ground ginger
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- pinch of cloves
Pork Chops:
- 2 pounds pork chops 4 chops, 8 ounces each
- 2 tablespoons avocado oil
Apples:
- 1 tablespoon butter or avocado oil
- 1 zucchini 1 large or 2 small (~2 cups), peeled and cut into 1/2 inch pieces
- 1/3 cup monk fruit granulated, or liquid equivalent
- 1/2 teaspoon cinnamon
- 4 tablespoons lemon juice or more, to taste
- cilantro for garnish
Instructions
- Combine rub ingredients and use it to coat the pork chops.
- Prepare the “apples” by heating a tablespoon butter in a nonstick skillet over medium high heat. Add the zucchini slices, lemon juice, salt, cinnamon, and monk fruit. Cook over medium high heat until the zucchini are soft, beginning to brown, and the liquid is almost gone, about 15 minutes. Adjust seasoning with lemon juice and monk fruit – you want it to be sweet and tart. Set aside.
- While the “apples” cook, prepare the pork chops. Heat a large pan over medium-high heat and when hot, add the oil. When the oil is hot, add the seasoned pork chops and cook until browned, about 5 minutes, then turn and cook again, until browned, another 5 minutes or until 145ºF. Set aside to rest for 5 minutes.
- Serve the pork chops with the “apples” over top and sprinkled with cilantro, if desired.
