Thai Cabbage Salad

This flavorful no-cook salad is delicious, refreshing, and full of crunch.

Ingredients

  • 1/4 cup rice vinegar more to taste
  • 1 tablespoon monk fruit granulated, or more to taste
  • 1/8 cup avocado oil
  • 2 tablespoons curry powder
  • 1 teaspoon salt plus more to taste
  • 4 cups cabbage sliced thin (look for pre-sliced cabbage)
  • 2 green onions sliced thin
  • 1 red bell pepper diced
  • 1 cucumber quartered then cut into 1-inch pieces
  • 1/2 bunch cilantro
  • 1/2 cup peanuts or almonds optional

Instructions

  • Combine rice vinegar, monk fruit, if using, avocado oil, curry powder, and salt. Mix well then add the remaining ingredients. Stir to ensure everything is evenly coated. Taste and adjust seasoning as desired with more monk fruit, salt, and vinegar as needed.
