Hoedeopbap (Korean Style Poke Bowl)
Hoedeopbap is Korean raw fish salad that that gets dressed in a bright, rich, savory, sweet, hot, and umami filled dressing for a refreshingly light yet flavor packed meal.

Ingredients
Dressing
- 1 tablespoon gochujang
- 1 tablespoon rice vinegar
- 1 tablespoon coconut aminos
- 1/2 teaspoon toasted sesame oil
- 1/2 teaspoon toasted sesame seeds
Salad
- 1/2 english cucumber sliced thin
- 1 small carrot shredded
- 2 cups mixed salad greens
- 1 cup cabbage shredded
- 1/2 cup pea shoots
- 12 ounces raw tuna sashimi grade, diced
- 1/2 avocado sliced
- 1/4 cup pickled radish optional
Topping
- seaweed
- toasted sesame seeds
Instructions
- Whisk together all dressing ingredients in a bowl and set aside.
- Arrange all the salad components on a plate. Drizzle with dressing, garnish as desired, and serve.
