Grilled Shrimp with Green Goddess Slaw
Bright and herbal, quickly grilled yet tender and sweet shrimp contrast nicely with crisp cabbage slaw and crunch from pepitas for a delicious and easy refreshing meal.

Ingredients
- 1 pound shrimp
- salt and pepper to taste
- pinch of baking soda
- 2 cups cabbage sliced thin
- 1/4 cup pepitas optional, omit for low fat
- small handful of fresh herbs optional, for garnish
Green Goddess Dressing
- 2 tablespoons mayonnaise or 2 tablespoons non-fat Greek yogurt for low fat
- 2 tablespoons sour cream or more mayonnaise for dairy-free
- 1 tablespoon water
- 1 tablespoon basil
- 1 tablespoon parsley
- 1 tablespoon tarragon
- 1 tablespoon chives
- 1 clove garlic clove peeled
- 2 teaspoons lemon juice 1 lemon
- zest of 1 lemon
- 1/4 teaspoon salt
Instructions
- Season the shrimp with salt and pepper, to taste. Sprinkle with baking soda and toss to coat evenly. Set aside.
- Combine the dressing ingredients in a small blender and blend until smooth. Toss most of the dressing with the cabbage, leaving a bit to drizzle over the shrimp later.
- Thread the shrimp onto skewers and grill on high heat, about 2 minutes per side, or until cooked through. Top the slaw with the shrimp and drizzle with reserved dressing. Garnish with pepitas and fresh herbs, if using.
