Season the shrimp with salt and pepper, to taste. Sprinkle with baking soda and toss to coat evenly. Set aside.
Combine the dressing ingredients in a small blender and blend until smooth. Toss most of the dressing with the cabbage, leaving a bit to drizzle over the shrimp later.
Thread the shrimp onto skewers and grill on high heat, about 2 minutes per side, or until cooked through. Top the slaw with the shrimp and drizzle with reserved dressing. Garnish with pepitas and fresh herbs, if using.
