Peruvian Chicken Meatballs with Green Sauce

Flavorful and juicy meatballs get a lift from a bright and punchy herbal garlicky green sauce. You can make this either low or high fat, as desired.

Ingredients

Meatballs

  • 1 1/3 pounds lean ground turkey chicken, beef, pork, or a mixture, use full fat for higher fat
  • 1/2 cup pork panko or almond flour for pork-free
  • 1 egg lightly beaten
  • 2 green onions chopped fine
  • 2 garlic cloves minced
  • 2 tablespoons gluten-free soy sauce or coconut aminos
  • 1 1/2 teaspoons gelatin unflavored
  • 1/2 teaspoons paprika ground, omit for nightshade free
  • 1 teaspoon cumin ground
  • 1/2 teaspoon chili powder omit for nightshade free
  • 1/4 teaspoon black pepper fresh ground
  • 1/4 teaspoon oregano dried
  • 1/2 teaspoon salt

Sauce

  • 4 ounces reduced fat cream cheese or kite hill cream cheese if dairy-free, use full fat for higher fat
  • 1/4 cup low fat greek yogurt or 1/4 cup mayo or aioli if dairy-free
  • 2 cloves garlic peeled
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1 cup cilantro 1 bunch, including stems
  • 1/4 cup pickled jalapeños omit for nightshade free
  • 1/8 teaspoon black pepper fresh ground

Instructions

  • Combine all meatball ingredients in a large bowl and use your hands to mix until evenly combined. Form into about 1 tablespoon size meatballs, about 32 meatballs.
  • Heat a large nonstick pan over medium-high heat. When hot, add the avocado oil. When the oil is hot, add the meatballs. Cook until golden, turning occasionally until browned on all sides, about 10-15 minutes.
  • While the meatballs cook, combine all sauce ingredients a blender and blend until completely smooth. Set aside.
  • Serve the meatballs with the sauce.
