Bingsu (Korean Shaved Ice Milk with Fresh Fruit and Sweetened Condensed Milk)

Bingsu is a Korean shave ice made from milk that gets topped with fresh fruit and a drizzle of sweetened condensed milk. It is especially refreshing and delicious on a hot day and can also be made dairy free. I like to make extra of the frozen base to keep in the freezer for an on demand cool treat in the summer heat.

Ingredients

  • 1 cup half n half plus 3 cups water or 4 cups cashew milk or almond milk for dairy-free, or coconut milk beverage for nut-free

Sweetened Condensed Milk Drizzle

To Serve

  • 1 kiwi peeled and sliced
  • 4 strawberries
  • 1 mango

Instructions

For the Shave Ice

  • Mix the half n half with the water and freeze (either as ice cubes or discs for an ice shaver).

For the Sweetened Condensed Milk

  • Combine the cream, allulose, and salt and bring to a boil. Cook until reduced by half and the mixture is thick. Add stevia, to taste and then chill.

To Serve

  • Slice the fruit into bite size pieces and shave the frozen milk (either in a food processor, blender, or shave ice machine). Spoon the shave ice into a bowl and top with fruit. Drizzle with condensed milk and serve immediately.
