Bingsu (Korean Shaved Ice Milk with Fresh Fruit and Sweetened Condensed Milk)
Bingsu is a Korean shave ice made from milk that gets topped with fresh fruit and a drizzle of sweetened condensed milk. It is especially refreshing and delicious on a hot day and can also be made dairy free. I like to make extra of the frozen base to keep in the freezer for an on demand cool treat in the summer heat.
Mix the half n half with the water and freeze (either as ice cubes or discs for an ice shaver).
For the Sweetened Condensed Milk
Combine the cream, allulose, and salt and bring to a boil. Cook until reduced by half and the mixture is thick. Add stevia, to taste and then chill.
To Serve
Slice the fruit into bite size pieces and shave the frozen milk (either in a food processor, blender, or shave ice machine). Spoon the shave ice into a bowl and top with fruit. Drizzle with condensed milk and serve immediately.
