Chicken and Cabbage Salad with Ginger Miso Dressing
Punchy flavors from ginger and miso liven up a low fat chicken salad.

Ingredients
- 1/2 cup chicken broth plus more as needed
- 2 tablespoons gluten-free soy sauce or coconut aminos
- pinch of monk fruit optional, omit if using coconut aminos
- 1 tablespoon ginger fresh grated
- 1 tablespoon miso paste
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha optional, omit for nightshade-free
- 1 pound chicken breast boneless, skinless, cooked and shredded
- 2 cups thinly sliced cabbage
- 1 green onion thinly sliced
Instructions
- Combine chicken broth, soy sauce, ginger, miso, vinegar, and sriracha in a large bowl. Stir to combine. Add the chicken, cabbage, and green onion. Toss to coat evenly. Add more chicken broth as desired. Season to taste with salt and pepper.
