Greek Beef Sauté
Rich and robust flavors get a nice lift from some briny feta and fresh parsley in this easy one-pot Greek inspired dish.

Ingredients
- 1 pound lean ground beef
- 1 cup onion minced, 1 small onion
- 2 bell pepper diced
- 2 garlic cloves minced
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 14 ounce can diced tomatoes
- 10 ounces frozen chopped spinach thawed and squeezed dry, substitute arugula for lower oxalates
- 1/4 cup parsley minced
- 1/2 cup low fat feta cheese crumbled, or your favorite dairy-free alternative
Instructions
- Heat a large nonstick pan over medium-high heat and add the beef. Cook, stirring to break the meat into small pieces until there is no pink remaining, about 5-10 minutes.
- Add the onion, bell pepper, and garlic and cook, stirring occasionally until the onion is soft and translucent, about 5-10 minutes. Add the garlic and cook until fragrant, 1 minute more.
- Add the salt, oregano, and tomatoes and bring to a simmer. Cook for another 5-10 minutes.
- Remove the pan from the heat and stir in the spinach and parsley. Sprinkle with feta and serve.
