Heat a large nonstick pan over medium-high heat and add the beef. Cook, stirring to break the meat into small pieces until there is no pink remaining, about 5-10 minutes.
Add the onion, bell pepper, and garlic and cook, stirring occasionally until the onion is soft and translucent, about 5-10 minutes. Add the garlic and cook until fragrant, 1 minute more.
Add the salt, oregano, and tomatoes and bring to a simmer. Cook for another 5-10 minutes.
Remove the pan from the heat and stir in the spinach and parsley. Sprinkle with feta and serve.
