Kimchi Fried Cauliflower Rice (Kimchi Bokkeumbap)
Earthy, sweet, savory, and spicy, this kimchi and cauliflower-based stir fry is finished with a sprinkling of furikake and fresh green onions for a fast, easy, delicious, and nutritious meal. You can omit the meat to make this vegetarian. Either add tofu in place of the ham or else make scrambled eggs to serve along with the fried rice. Adding egg whites to an egg or two increases the protein percentage.

Ingredients
- 1/2 teaspoon avocado oil
- 2 garlic cloves minced
- 6 green onions chopped, whites and greens separated, greens reserved for garnish
- 4 ounces mushrooms high vitamin D, minced
- 1 cup kimchi chopped (6 ounces) plus any accompanying juices
- 1 tablespoon gochujang
- 8 ounces ham diced, or pork belly for high fat
- 2 cups cauliflower rice
- 1 teaspoon toasted sesame oil
- 4 eggs
- 2 tablespoons furikake
Instructions
- Heat a large nonstick pan over medium heat and add the oil along with the garlic and whites of the green onions. Cook, stirring often until the onions are soft and translucent, about 5 minutes. Add the mushrooms and cook until they release their liquid. Add the kimchi, kimchi juice, and gochujang and cook until little to no liquid remains, about 5 minutes.
- Add the cauliflower rice and cook, stirring occasionally until tender and no liquid is remaining. Stir in toasted sesame oil and ham and reduce heat to low, cook without stirring until the bottom of the mixture begins to brown, another 5-10 minutes.
- While the fried rice cooks, set another small nonstick pan over medium-high heat. Cook the eggs to desired doneness.
- To serve, divide the stir fry between serving plates. Top with fried eggs and sprinkle with furikake and scallion greens.
