Steak Bites with Green Goddess Sauce on Mixed Greens

Seasoned steak bites with a low-fat herbal sauce. I like to serve this with a side salad and some cauliflower puree.

Ingredients

Steak

  • 1 pound sirloin steak tips cut into 2-inch pieces
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper fresh ground
  • 1 teaspoon avocado oil

Green Goddess Sauce

  • 1/2 avocado or 1 medium zucchini for lower fat
  • 1 tablespoon basil
  • 1 tablespoon parsley
  • 1 tablespoon tarragon
  • 1 tablespoon chives
  • 1 clove garlic peeled
  • 2 teaspoons lemon juice 1 lemon
  • zest of 1 lemon
  • 1/4 teaspoon salt

Optional Salad

  • 1/2 avocado
  • 2 cups baby spinach
  • 2 cups mixed greens
  • 1/2 cup edamame shelled
  • 8 cherry tomatoes quartered
  • 1//4 cup sunflower seeds toasted

Instructions

  • Add the steak tips, Worcestershire sauce, garlic powder, onion powder, salt, and pepper to a medium bowl and toss to coat evenly. Set aside and let marinate for 15 minutes at room temperature.
  • While steak marinates, prepare the sauce. Combine all ingredients in a high power blender and blend until completely smooth. Add water as needed to be able to blend the zucchini. Season to taste with salt and pepper. Set aside.
  • Heat 1 teaspoon avocado oil in a hot pan over medium-high heat. Add the beef and cook until browned on all sides cooked to your liking, about 7 minutes total for medium rare (125ĀŗF).
  • Combine all salad ingredients and serve steak and sauce over top, if desired.
