Low-Fat Greek Salad
Bright and briny, this is a low-fat take on the Greek classic.

Ingredients
- 1 large tomato seeded and diced, or 1/2 cup cherry tomatoes, halved
- 1 English cucumber quartered and sliced 1/2-inch thick
- 1/2 cup low fat feta cheese crumbled, use full fat cheese if not restricting calories
- 1/4 cup Kalamata olives sliced, optional
- 1/4 small red onion diced 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon red wine vinegar
- 1/2 teaspoon oregano dried
- 1/8 teaspoon salt or more to taste
- 1/8 teaspoon black pepper fresh ground or to taste
- zest of 1/2 lemon optional
Instructions
- Combine all ingredients and toss to coat evenly.
