Low-Fat Greek Salad

Bright and briny, this is a low-fat take on the Greek classic.

Ingredients

  • 1 large tomato seeded and diced, or 1/2 cup cherry tomatoes, halved
  • 1 English cucumber quartered and sliced 1/2-inch thick
  • 1/2 cup low fat feta cheese crumbled, use full fat cheese if not restricting calories
  • 1/4 cup Kalamata olives sliced, optional
  • 1/4 small red onion diced 
1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon oregano dried
  • 1/8 teaspoon salt or more to taste
  • 1/8 teaspoon black pepper fresh ground or to taste
  • zest of 1/2 lemon optional

Instructions

  • Combine all ingredients and toss to coat evenly.
