Maple Glazed Radishes

Cooking radishes takes the harsh edge off of them. Here, sautéing them in butter until a bit browned results in sweet yet tender-crisp bites. A sweet maple flavored glaze lends a holiday twist.

Ingredients

  • 2 tablespoons butter or butter flavored coconut oil, or avocado oil for dairy-free
  • 8 ounces radishes halved
  • 1/4 cup keto-friendly maple syrup
  • salt and pepper to taste
  • pinch cayenne optional, omit for nightshade-free
  • 1 tablespoon lemon juice
  • 1 tablespoon parsley minced, for garnish, optional

Instructions

  • Melt the butter in a large pan over medium high heat. When hot, add the radishes, cut face down. Cook until browned, about 5-8 minutes.
  • Add the syrup and cover the pan to steam the radishes until tender, another 3-5 minutes.
  • Uncover pan and cook until most of the liquid is evaporated off and the radishes are as caramelized as you like, another 3-5 minutes. Season to taste with salt, pepper, and cayenne. Off heat, stir in lemon juice and sprinkle with parsley, serve.
