Hearts of Palm Pasta with Smoked salmon and Horseradish Sauce

Ingredients

  • 2 tablespoons prepared horseradish
  • 2 tablespoons sour cream or coconut cream for dairy-free
  • 2 tablespoons lemon juice 1 lemon
  • zest of 1 lemon
  • 6 ounces smoked salmon
  • 4 tablespoons parsley leaves
  • 14 ounce can hearts of palm pasta drained
  • salt and pepper to taste

Instructions

  • Combine the horseradish, sour cream, lemon juice, and zest in a large bowl. Add the salmon, parsley, and hearts of palm. Toss to coat evenly and season to taste with salt and pepper.
