Hearts of Palm and Avocado Salad

Bright, crisp, creamy, tangy, and sweet, this salad hits all the right notes. Best of all, it requires no cooking and comes together fast for an easy side dish!

Ingredients

  • 14 ounce can hearts of palm drained and sliced
  • 1 avocado diced
  • 1/2 cup cherry tomatoes quartered, mint for nightshade-free
  • 1/8 red onion sliced thin
  • 1 garlic clove minced
  • 1 tablespoon red wine vinegar or lemon juice
  • pinch of monk fruit to taste, optional
  • salt and pepper to taste
  • 2 tablespoons parsley minced, cilantro or basil work well here to or even a combination
  • zest of 1 lemon
  • small pinch cayenne optional, omit for nightshade-free

Instructions

  • Combine all ingredients in a bowl and gently mix together. Season to taste and serve.
