Vadouvan Shrimp Noodles
This shrimp sauté is full of flavor. Vadouvan is a French version of a curry spice blend. Here, it infuses the shrimp with rich spice. Top some seasoned kelp noodles and green onions with the curried shrimp for a full meal.

Ingredients
- 1 pound shrimp peeled and deveined
- 2 teaspoons Vadouvan seasoning blend
- 1/2 tablespoon sriracha
- 1/4 teaspoon salt
- 1 garlic clove
- 1 teaspoon avocado oil
- 3 tablespoons gluten free soy sauce or coconut aminos
- stevia glycerite to taste (start with a drop or two)
- 7 ounce package kelp noodles drained and rinsed under hot water
- 3 green onions sliced into 1-inch segments
Instructions
- Toss the shrimp with the Vadouvan seasoning, sriracha, salt, and garlic. Set aside for 10 minutes.
- Heat a large pan over medium high heat. When hot, add the avocado oil. Add the shrimp and cook, stirring occasionally until the shrimp are just cooked through and opaque, about 2 minutes. Reserve and do not clean the pan.
- Add the soy sauce, stevia, kelp noodles, and green onion. Cook until the noodles are coated in the sauce and the green onions are wilted. Add back the shrimp and cook until heated through. Serve immediately.
