Cauliflower Tabbouleh

Bright, fresh, and herbal, this cauliflower tabbouleh is an easy no-cook side dish.

Ingredients

  • 1 cup cauliflower rice
  • 1 Roma tomato seeds squeezed out and diced small
  • 1 tablespoon lemon juice 1 small lemon
  • 2 tablespoons olive oil
  • pinch cayenne pepper
  • 1/2 cup parsley minced
  • 1/8 cup mint minced
  • 1 green onion sliced thin
  • salt and pepper to taste

Instructions

  • Combine all ingredients in a bowl and toss to distribute evenly. Season to taste with salt and pepper, and more lemon juice, if desired.
