Star Anise Chicken Cups
Minced chicken is flavored with a sweet, savory, and tangy sauce scented with five spice powder and star anise. Serve in lettuce or endive cups with a garnish of chopped macadamias for crunch, if desired.

Ingredients
- 1 tablespoon avocado oil
- 1 pound chicken thighs chopped fine (or ground chicken)
Sauce
- 1/8 teaspoon xanthan gum
- 1/3 cup gluten-free soy sauce or coconut aminos
- 3 tablespoons sherry vinegar
- 3 tablespoons monk fruit powdered or liquid equivalent
- 1 teaspoon five spice powder
- 3 star anise pods
To Finish
- 1/3 cup macadamias chopped, optional, omit if nut-free
- 1 head romaine lettuce or 2 endive heads, separated into individual leaves
Instructions
- Heat the oil in a large skillet over medium high heat and when hot, add the chicken, stirring often. When the meat releases juices, add the sauce ingredients and cook, stirring every so often until the sauce is reduced and rich brown in color. Cool for 10 minutes.
- Add chopped macadamia nuts, toss together to coat everything evenly and spoon into leaves.
