Peruvian Chicken with Green Sauce

Savory chicken full of umami and spice is roasted until crispy then covered with an unctuous yet bright and herbal creamy cilantro sauce.

Ingredients

Chicken

  • 3 pound whole chicken
  • 2 tablespoons lime juice 1 lime
  • 3 garlic cloves minced
  • 3 tablespoons gluten-free soy sauce or coconut aminos
  • 2 teaspoons paprika omit for nightshade free
  • 2 teaspoons cumin
  • 1 teaspoon chili powder omit for nightshade free
  • 1 teaspoon monk fruit granulated, optional, omit if using coconut aminos
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt

Green Sauce

  • 4 ounces cream cheese or kite hill cream cheese if dairy-free
  • 1/4 cup sour cream or 1/4 cup mayo or aioli if dairy-free
  • 2 cloves garlic
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1 cup cilantro 1 bunch including stems
  • 1/4 cup pickled jalapeños omit for nightshade free
  • 1/8 teaspoon pepper

Instructions

For the Chicken

  • Combine all ingredients except the chicken. Pour over the chicken and marinate for 4 hours and up to 8.
  • When ready to cook, preheat the oven to 450ºF. Line a rimmed baking sheet with foil and grease with a bit of oil. Place the chicken onto the baking sheet and cook at 450ºF for 40 minutes. Reduce the oven temperature to 250ºF and cook for another 20 minutes, or until the temperature is 165ºF when measured at the thickest part of the thigh. Let rest for 10 minutes before serving with the sauce.

For the Green Sauce

  • Combine all ingredients in a high power blender and puree until smooth. Adjust seasonings to taste.
