Combine all ingredients except the chicken. Pour over the chicken and marinate for 4 hours and up to 8.
When ready to cook, preheat the oven to 450ºF. Line a rimmed baking sheet with foil and grease with a bit of oil. Place the chicken onto the baking sheet and cook at 450ºF for 40 minutes. Reduce the oven temperature to 250ºF and cook for another 20 minutes, or until the temperature is 165ºF when measured at the thickest part of the thigh. Let rest for 10 minutes before serving with the sauce.
For the Green Sauce
Combine all ingredients in a high power blender and puree until smooth. Adjust seasonings to taste.
