Brussels Sprouts with Bacon and Onions
This is a delicious side dish of Brussels sprouts with sweet onion and smokey bacon. Inspired by a recipe from Jaques Pépin.

Ingredients
- 3/4 pound Brussels sprouts ends trimmed, halved and cut into 1/4-inch slices, about 3 cups sliced
- 1/2 onion diced
- 6 ounces bacon sliced thin, about 5-6 strips
- 3 garlic cloves minced
- salt and pepper to taste
Instructions
- Heat a large pan over medium-high heat. Add the bacon and cook until it is crisp. Remove the bacon with a slotted spoon, leaving all the rendered fat in the pan.
- Add the onions and cook over medium-high heat, stirring occasionally until they soften and are beginning to brown. Add the garlic and cook until fragrant, one minute longer. Add the sliced Brussels sprouts and cook, stirring frequently until they are well coated in the oil and onion mixture. Cook until they wilt slightly but are still tender crisp, about 5-10 minutes. Season with salt and pepper to taste and stir in the bacon before serving.
