Curried Pork Kabobs
This pork kabob recipe is easy and flavorful. You can use any curry paste (or really any marinade you like) here. A nice variation is to grill these.

Ingredients
- 1 pound pork tenderloin cut into 1 1/2-inch pieces
- 1 tablespoon lemon juice
- 1 tablespoon coconut aminos
- 1 1/2 tablespoons yellow curry paste or any curry paste you like – the yellow is typically more mild so add less of the red or green
- salt and pepper to taste
Instructions
- If you are using wooden skewers, be sure to soak the in water for 30 minutes before using or they will burn.
- Combine all ingredients in a bowl and toss to coat the pork evenly. Let marinate for at least 30 minutes and up to 4 hours.
- Preheat the oven to 425ºF. Thread the pork onto 4 skewers and place the kabobs onto a greased rimmed baking sheet. Bake for 12 minutes, or until the pork is just slightly pink in the middle (if you overcook them, they will be dry). Let rest 5 minutes before serving.
