If you are using wooden skewers, be sure to soak the in water for 30 minutes before using or they will burn.
Combine all ingredients in a bowl and toss to coat the pork evenly. Let marinate for at least 30 minutes and up to 4 hours.
Preheat the oven to 425ºF. Thread the pork onto 4 skewers and place the kabobs onto a greased rimmed baking sheet. Bake for 12 minutes, or until the pork is just slightly pink in the middle (if you overcook them, they will be dry). Let rest 5 minutes before serving.
