Chicken Salad with Capers and Olives
This is a chicken salad full of briny pops from the capers and Kalamata olives.

Ingredients
- 2 pounds boneless chicken breast halves pre-cooked and roughly chopped
- 3/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 4 large stalks celery chopped
- 4 ounces capers 1 small jar
- 4 green onions sliced thin
- 1/2 cup parsley
- 1 cup kalamata olives roughly chopped
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
Instructions
- Combine all ingredients to a bowl and mix. Taste and adjust seasoning with more salt and pepper, as desired.
