Chicken Salad with Capers and Olives

Ingredients

  • 2 pounds boneless chicken breast halves pre-cooked and roughly chopped
  • 3/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 4 large stalks celery chopped
  • 4 ounces capers 1 small jar
  • 4 green onions sliced thin
  • 1/2 cup parsley
  • 1 cup kalamata olives roughly chopped
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt

Instructions

  • Combine all ingredients to a bowl and mix. Taste and adjust seasoning with more salt and pepper, as desired.
