Radish Salad

This is a bold flavored salad full of crunch and slightly spicy from the radishes themselves. You can add any herbs you like here. A bit of lemon zest is a nice addition.

Ingredients

  • 1/2 teaspoon anchovy paste
  • 1 small garlic clove peeled
  • pinch of salt
  • Pinch of monk fruit optional
  • 1/2 tablespoon white wine vinegar or lemon juice
  • 1 tablespoon avocado oil
  • 1 tablespoon parsley
  • 1/2 tablespoon capers chopped
  • 1 large bunch radishes 2 cups, cut into bite-size pieces or sliced thin, any nice green leaves reserved

Instructions

  • Combine all ingredients except radishes their leaves, and capers in a small food processor and blend until smooth and emulsified (you can also do this in a mortar and pestle).
  • Toss the radishes with the dressing and adjust seasonings to taste, adding more salt, vinegar, sweetener, as needed. Garnish with capers and a bit of fresh ground black pepper.
