This is a bold flavored salad full of crunch and slightly spicy from the radishes themselves. You can add any herbs you like here. A bit of lemon zest is a nice addition.
1large bunch radishes2 cups, cut into bite-size pieces or sliced thin, any nice green leaves reserved

Combine all ingredients except radishes their leaves, and capers in a small food processor and blend until smooth and emulsified (you can also do this in a mortar and pestle).
Toss the radishes with the dressing and adjust seasonings to taste, adding more salt, vinegar, sweetener, as needed. Garnish with capers and a bit of fresh ground black pepper.
