Fish in Pesto Sauce
Simple yet flavorful, fish cooked in a creamy pesto sauce makes an easy and fast weeknight meal.

Ingredients
- 3/4 pound mahi mahi or other firm white fish such as cod, or tilapia, 2 filets
- salt and pepper to taste
- 1 tablespoon butter or butter flavored coconut oil for dairy-free
- 1 shallot diced
- 1 garlic clove minced
- 1/4 cup heavy cream or coconut cream for dairy-free
- 1/4 cup chicken broth
- 1 tablespoon pesto you can make your own for dairy-free and/or nut-free
- lemon slices to serve
- additional basil for garnish, optional
Instructions
- Season fish with salt and pepper and set aside.
- Melt butter in a large pan over medium high heat. Add the shallots and cook until soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about one minute more. Stir in cream, broth, and pesto and reduce heat to a simmer. Add the fish filets and simmer for 5-10 minutes, or until fish is cooked through and flakes when tested with a fork.
- Remove fish to a serving dish and reduce sauce until slightly thickened, another 5 minutes or so. Spoon over fish and serve with lemon and more basil as garnish.
