Ingredients
Shrimp
- 1 tablespoon butter or avocado oil
- 1 teaspoon cajun seasoning
- 1 pound shrimp peeled and deveined
Sauce
- 1/2 cup chopped green onions
- 1/2 teaspoon crushed red pepper flakes
- 2 cloves garlic minced
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh thyme
- 1/2 teaspoons salt
- 1/2 teaspoons ground black pepper
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon cajun seasoning
- 2 cups heavy cream or coconut cream if dairy-free
- 1/4 cup parsley chopped, plus more for garnish
- 1/2 cup shredded mozzarella omit for dairy-free but add a sprinkling of glucomann powder as a thickener
- 1/2 cup grated Parmesan cheese or nutritional yeast if dairy-free
- 14 oz hearts of palm noodles
- 1 tablespoon lemon juice
Instructions
- Drain the palm noodles in a fine mesh strainer and rinse with hot water, let drip dry in the sink while you prepare the rest of the dish.
- Melt butter in a large pan over medium-high heat. Toss the shrimp with a generous pinch of salt and the cajun seasoning. When butter is hot, add the shrimp and sauté until just cooke through, stirring occasionally, about 4-5 minutes. Remove shrimp from pan and set aside. Do not clean the pan.
- In the now empty pan, add the green onions, red pepper, and garlic. Continue cooking for another minute, until fragrant. Stir in cream, basil, thyme, salt, peppers, and cajun seasoning. Bring to a simmer and reduce by half, about 8 minutes. Add the mozzarella, parmesan, and palm noodles, tossing with tongs to coat evenly. Cook until thickened slightly. Top with shrimp and serve, garnished with parsley.
