Ingredients
- 3 pounds spare ribs
Rib Rub
- 1/3 cup monk fruit golden
- 2 tablespoons sweet paprika
- 1 tablespoon smoked paprika
- 1 tablespoon black pepper
- 1 tablespoon salt
- 1 tablespoon chili powder
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon coriander ground
- 1 teaspoon celery seeds crushed
BBQ Sauce
- 1 tablespoon avocado oil
- 1/2 yellow onion grated
- 2 tablespoons rib rub see above
- 3/4 cups keto-friendly ketchup such as Alternasweets (or use 1/3 cup tomato paste and 1/2 cup monk fruit, golden with a few tablespoons water to thin the paste)
- 1 tablespoon mustard
- 1/4 cup monk fruit golden
- 2 tablespoons Worcestershire sauce make sure it’s gluten-free
- 1/4 cup apple cider vinegar
- 1/2 teaspoon liquid smoke
Instructions
- Combine rib rub ingredients in a bowl, reserve 2 tablespoons for the sauce and sprinkle the rest over both sides of the ribs. Wrap the ribs in foil and bake at 250ºF for 2 1/2-3 hours, or until a toothpick inserted into the meat finds little resistance.
- While the ribs cook, make the sauce. Add one tablespoon of avocado oil to a small pot and when hot, add the onion. When the onion is softened and fragrant, about 5 minutes. Add all remaining ingredients then bring to a boil then reduce heat and simmer, uncovered until the sauce thickens. Taste and adjust seasoning with more salt, pepper, monk fruit, and vinegar to taste.
- After 2 1/2 hours baking, brush the ribs with the BBQ sauce and put them under the broiler for 5 minutes, until the sauce bubbles and caramelizes. Rest for at least 10 minutes before serving with the remaining sauce.
Notes
You can also finish these on the grill over high heat for 3-4 minutes per side – they are fully cooked, you just need to caramelize them slightly. Brush sauce on while finishing grilling them (too early and the sauce can burn).
