Banana Pudding
This is a creamy, easy, no-cook breakfast pudding enriched with protein. It’s like dessert for breakfast. Start with 1 teaspoon of banana extract and add up to another teaspoon, to taste. This recipe is adapted from Maria Emmerich’s chocolate protein pudding.

Ingredients
- 10 hard boiled eggs peeled
- 2 tablespoons collagen
- 1/4 cup vanilla protein powder egg white based
- 13.5 ounce can coconut milk or 1 3/4 cups heavy cream, if not dairy-free
- 1/2 cup monk fruit powdered, or liquid sweetener, to taste
- 1-2 teaspoons banana extract or more, to taste
- 1 teaspoon vanilla
- 1/8 teaspoon salt
- yellow food dye natural, optional
Instructions
- Combine all ingredients in a high powdered blender and blend on high until completely smooth. Refrigerate overnight before serving for best taste.
Notes
Leave out the protein powder if making this for dessert and you don’t need any extra protein. Made this way, the nutrition is Calories: 357 cal, Carbs: 4g, Fiber: 1g, Fat: 28g, Protein: 20g.
