Antipasto Skewers

Ingredients

  • 12 cherry tomatoes
  • 12 basil leaves
  • 12 slices salami
  • 12 marinated artichoke quarters
  • 12 ciliegine mozzarella bites

Instructions

  • Layer each ingredient on a toothpick and lay on a platter.

Without the artichokes: Calories: 179, Carbs: 3, Fiber: 1, Fat: 14, Protein: 13
Without the mozzarella (dairy-free): Calories: 157, Carbs: 6, Fiber: 2, Fat: 12, Protein: 7
With olives, no mozzarella, and no artichoke hearts (dairy-free and nightshade-free): Calories: 137, Carbs: 3, Fiber: 1, Fat: 11, Protein: 7
Other good additions or swaps: olives, feta, marinated red bell peppers. Omit the salami if vegetarian.
