Oven Cooked Bacon (and Candied Bacon)

This one isn't really a recipe, more instructions. Baking bacon takes away the mess and frustration of preparing large batches. Additionally, the bacon is flat and evenly cooked, perfect for large preparations. Adding granulated monk fruit produces a candied bacon that is amazing for snacking or chopped and sprinkled on salads.

Ingredients

  • 1 pound bacon 12 strips (thick cut)
  • 1/4 cup monk fruit granulated, or to taste, optional

Instructions

  • Adjust the oven racks so that you are using the middle position then turn the oven to 400ĀŗF.
  • Line a rimmed baking sheet (to catch the grease) with foil for easy clean up.
  • Arrange the bacon slices in the pan so that they aren’t overlapping then bake at 400ĀŗF for 5-7 minutes for thin cut bacon then rotate the sheet and cook another 5-7 minutes, until it is crisped and brown. You’ll want to cook for 8-12 minutes for thick cut bacon, then rotate and cook another 8-12 minutes.
  • Use tongs or a fork to transfer the bacon to a plate lined with paper towels to soak up any extra grease.
  • Alternatively, you can roast the bacon at 350ĀŗF, turning the bacon strips over with tongs halfway through cooking, 30-40 minutes in total for thick cut bacon.
  • To make candied bacon, follow the instructions above but sprinkle the bacon strips with granulated monk fruit, to taste on one side, flipping and sprinkling again on the second side.

Notes

Keep a can in the freezer and save the bacon drippings. They make great oil for frying eggs, or sautƩing veggies or anything you want to have a slight bacon flavor. And it stores great that way.
I like to bake up a whole package of bacon at once and store the cooked pieces in the refrigerator for snacking throughout the week. Baked pieces can be eaten straight from the refrigerator or reheated briefly in the oven or a microwave.
The nutrition facts will vary depending on how thick the bacon is. Here, the serving size is 2 pieces. Nutrition is the same with and without the monk fruit added.
