Hot Chocolate
The egg in this makes for a super thick and decadent hot chocolate treat. A little goes a long way. Top with some whipped cream or coconut cream. You can also add different spices (like chai spices) or extracts such as peppermint to vary the flavors.Ā

Ingredients
- 1/2 cup cream or coconut cream, if dairy-free
- 2 1/2 cups coconut beverage
- 1/3 cup unsweetened chocolate chopped fine (2 ounces)
- 3 egg yolks
- 1/4 cup monk fruit granulated (or liquid equivalent)
- pinch of salt
- 1 teaspoon vanilla
Instructions
- Heat cream and coconut beverage until simmering in a small pot. Turn off heat and add in chocolate, salt, and monk fruit and let stand 5 minutes. Whisk until smooth.
- Pour about 1 cup of this into the yolks while whisking constantly to temper. Return the now tempered yolks to the pan heat again for a couple of minutes until slightly thickened, stirring constantly to prevent curdling, cooking until the mixture has thickened. Strain through a fine mesh sieve if the egg has curdled at all.
