Shaved Fennel Salad
This fennel salad is full of refreshing flavors. It goes well with any protein but I like to serve this with a seared ribeye. For an extra rich pop of flavor and color, top with grated cured egg yolk and some pink peppercorns.

Ingredients
- 1 large bulb fennel sliced 1/16th inch on a mandolin
- 2 tablespoons lemon juice 1 lemon
- zest of one lemon
- 1/4 cup avocado oil
- Salt and pepper to taste
- 1 small shallot minced
- thyme or tarragon minced (or chervil or chives)
- 1 teaspoon monk fruit granulated
Instructions
- Toss all ingredients together. Season to taste with more salt and pepper.
