Shaved Fennel Salad

This fennel salad is full of refreshing flavors. It goes well with any protein but I like to serve this with a seared ribeye. For an extra rich pop of flavor and color, top with grated cured egg yolk and some pink peppercorns.

Ingredients

  • 1 large bulb fennel sliced 1/16th inch on a mandolin
  • 2 tablespoons lemon juice 1 lemon
  • zest of one lemon
  • 1/4 cup avocado oil
  • Salt and pepper to taste
  • 1 small shallot minced
  • thyme or tarragon minced (or chervil or chives)
  • 1 teaspoon monk fruit granulated

Instructions

  • Toss all ingredients together. Season to taste with more salt and pepper.
