Bang Bang Chicken
Sweet, spicy, and tangy sauce on crispy bites of chicken. This dish goes well with ginger coleslaw as a side.

Ingredients
- 2 pound boneless skinless chicken thighs, cut into 1-inch cubes
- 1 egg beaten
- 2 cups pork Panko I used BBQ flavor, for added flavor
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper fresh ground
- 12 tablespoon gluten-free soy sauce
- 1/2 cup mayonnaise
- 2 tablespoons powdered monk fruit 4 tablespoons granulated
- 3 Tablespoons sriracha
Instructions
- Preheat oven to 400ºF and line a rimmed baking sheet with parchment paper.
- Combine pork panko, cayenne, salt, garlic powder, onion powder, paprika, and pepper in a bowl.
- Coat all the chicken pieces in egg then dip each piece in the pork panko mix. Place on the baking sheet. Bake for 30-40 minutes or until browned and cooked through.
- Combine mayonnaise, monk fruit, gluten-free soy sauce, and sriracha in a large bowl. Drizzle over chicken and serve.
