
Scallop Gratin
The pork rinds act as a bread crumb substitute and provide a nice crunch to the smooth texture of the scallop. lemon zest and parsley brighten up the dish.

Instructions
- Preheat the oven to 425ĀŗF.
- Combine the butter, garlic, shallots, parsley, lemon juice, salt, pepper, and half the ground pork rinds in a bowl and mix well.
- Layer the scallops in the bottom of an oven-safe dish.
- Smear butter mixture on top of the scallops and top with the remaining pork rinds.
- Bake at 425ĀŗF for 15 minutes, or until the scallops are cooked through.
- If the topping is not crisp at this point, broil for 2-3 minutes.
- Top with lemon zest and additional parsley, serve.
