Scallop Gratin

The pork rinds act as a bread crumb substitute and provide a nice crunch to the smooth texture of the scallop. lemon zest and parsley brighten up the dish.

Ingredients

  • 1 lb scallops
  • 3 tbsp butter at room temperature
  • 3 cloves garlic minced
  • 1 shallot minced
  • 1 tbsp parsley minced
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup pork rinds, divided in half ground, or pork panko
  • lemon zest for garnish

Instructions

  • Preheat the oven to 425ĀŗF.
  • Combine the butter, garlic, shallots, parsley, lemon juice, salt, pepper, and half the ground pork rinds in a bowl and mix well.
  • Layer the scallops in the bottom of an oven-safe dish.
  • Smear butter mixture on top of the scallops and top with the remaining pork rinds.
  • Bake at 425ĀŗF for 15 minutes, or until the scallops are cooked through.
  • If the topping is not crisp at this point, broil for 2-3 minutes.
  • Top with lemon zest and additional parsley, serve.
