Scallop Gratin
The pork rinds act as a bread crumb substitute and provide a nice crunch to the smooth texture of the scallop. lemon zest and parsley brighten up the dish.

1 lb scallops 3 tbsp butter at room temperature 3 cloves garlic minced 1 shallot minced 1 tbsp parsley minced 1 tbsp lemon juice 1/4 tsp salt 1/4 tsp black pepper 1/2 cup pork rinds, divided in half ground, or pork panko lemon zest for garnish

Preheat the oven to 425ºF.
Combine the butter, garlic, shallots, parsley, lemon juice, salt, pepper, and half the ground pork rinds in a bowl and mix well.
Layer the scallops in the bottom of an oven-safe dish.
Smear butter mixture on top of the scallops and top with the remaining pork rinds.
Bake at 425ºF for 15 minutes, or until the scallops are cooked through.
If the topping is not crisp at this point, broil for 2-3 minutes.
Top with lemon zest and additional parsley, serve.
