Easy Cilantro Shrimp
This shrimp dish is fast to put together and full of bright flavor, making it an easy weeknight meal.

Ingredients
- 6 cloves garlic peeled
- ⅓ cup avocado oil
- 5 scallions trimmed
- 1 cup cilantro or parsley
- 1 jalapeño seeds and membranes removed
- 1 pound large shrimp peeled
- Salt and pepper to taste
Instructions
- Preheat oven to 500 degrees F.
- Place garlic, oil, cilantro, onions, and jalapeño in a food processor and process until finely chopped. Add the salt and pepper.
- Prepare a roasting pan by lining it with foil. Place the shrimp on top and pour the blended herbs on top, tossing with the shrimp to mix well.
- Bake at 500F for 10 to 15 minutes, until the shrimp are pink and cooked through.
Notes
If you like more heat, leave the seeds and membrane in the jalapeño. If you dislike cilantro, use parsley.
