Berbere Chicken

Bright and flavorful, this easy chicken dinner utilizes a warming Ethiopian spice blend for a meal that cooks quickly with tender and juicy results. You can use any spice blend you like in place of berbere. A Rogan Josh seasoning blend or curry powder is another spice blend with middle eastern flavors that works well here.

  • Preheat the oven to 450ĀŗF and line a rimmed baking sheet pan with foil and spread a bit of oil on it.
  • Mix the mayonnaise with the spice blend and set aside. Season the chicken with salt and pepper and then coat the top with mayo spice mixture. Press the pork panko onto the mayonnaise and then place the coated chicken onto the prepared pan.
  • Roast at 450ĀŗF for 8-10 minutes, or until cooked through.

Notes

If you canā€™t find the berbere spice blend in the store, you can make your own by combining the following (store in a cool dry place for several months):
  • 6 tablespoons chili powder
  • 4 tablespoons sweet paprika (can add in 1 tablespoon smoked if you like)
  • 2 teaspoons onion powder
  • 2 teaspoons ground coriander
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground fenugreek
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon ground cloves
