Chicken Bulgogi with Shaved Cucumber and Carrot Salad
This chicken is a bit savory, sweet, spicy, and full of umami. The heat is balanced by a cool and crisp cucumber and carrot salad along with some fresh green onions and toasted sesame seeds.

Ingredients
Chicken
- 1 pound chicken thighs, boneless and skinless cut into bite size pieces
- 1/8 teaspoon baking soda helps to tenderize the meat
- 1 tablespoon gochujang
- 1 teaspoon ginger grated
- 2 garlic clove minced
- 1/4 cup coconut aminos
- 1/2 teaspoon toasted sesame oil
- 1 green onion sliced, optional, for garnish
Salad
- 1 English cucumber ends trimmed, halved, and sliced thin (I like to use a mandolin but a vegetable peeled works well too)
- 1 carrot peeled (I like to use a mandolin but a vegetable peeled works well too)
- 2 green onions sliced thin
- 1 tablespoon sriracha mayonnaise or add 1 teaspoon sriracha to 1 tablespoon mayo
- 1/2 tablespoon rice vinegar
- 1/4 teaspoon toasted sesame oil
- 1 teaspoon toasted sesame seeds
Instructions
- Sprinkle the chicken with the baking soda in a large nonstick pan. Massage to coat the chicken evenly and set aside to tenderize for 20 minutes while you prepare everything else.
- Combine the remaining chicken ingredients, except the sesame hill and green onion in a bowl and set aside.
- Toss together all salad ingredients in a bowl and adjust seasoning to taste, set aside.
- Heat the skillet with the chicken over high heat and add the reserved bowl of sauce. Cook until little to no liquid remains and the chicken is cooked through. Drizzle with sesame oil and sprinkle with green onions.
- Serve chicken with the salad along side.
